The Smokestack is essentially an Old Fashioned infused with fresh smoke. It is Industry Public House’s signature cocktail.
Take your favorite flavor of wood chips (I prefer pecan), place them on a strainer over a hefty rocks glass with a few ounces of whiskey, and torch them. Get a large bowl to cover the glass and smoldering wood to trap the smoke and infuse the whiskey for two minutes. Then take that whiskey (strain if needed to remove any ashes that might have dropped in there) and make an Old Fashioned with it.
Industry Public House uses maple syrup. That is a great choice. You can also use demerara, regular simple syrup, or any other sweetened syrup you please. Also feel free to use any kind of bitters you please. I prefer orange.
